  • 2 tbsp. vegetable oil

  • 1 red onion, sliced

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 4 slices pineapple, chopped

  • 1 tsp. sesame seeds, garnish

For the sauce:

  • ¼ cup (60ml) pineapple juice

  • ¼ cup (60ml) rice vinegar

  • 2 tbsp. tomato purée

  • 2 tbsp. maple syrup

  • 3 tbsp. tamari sauce

  • 2 cloves garlic, minced

  • 1 tsp. fresh ginger, grated

  • 1 tsp. corn starch

Instructions

  1. Cut tempeh into bite-sized pieces. Heat 1 tbsp. of oil in a pot over medium-high heat and cook until golden brown. Add water to cover halfway up the tempeh pieces, steam until water evaporates, then remove from pot.

  2. Mix all sauce ingredients in a small bowl until smooth.

  3. Heat remaining oil in the pot and sauté onion, peppers, and pineapple for 2–3 minutes.

  4. Return tempeh to the pot and pour in sauce. Lower heat and simmer until the sauce thickens.
