Why This Recipe Supports Your Wellness

Sweet potatoes – Rich in fiber and beta-carotene, they help feed your microbiome and support healthy digestion while delivering antioxidants that benefit skin and immune health.

Coconut milk & peanut butter – Healthy fats that help keep you full, stabilize energy, and allow for better absorption of fat-soluble vitamins.

Red curry paste & garlic – Anti-inflammatory powerhouses that bring flavor and gut-friendly benefits.

Lime & coriander – Freshness that aids digestion and adds brightness to balance the creamy sauce.

Rice – A grounding carbohydrate that brings comfort and steady energy, making this dish feel cozy and satisfying.

This combination isn’t just about taste—it’s about balance. You’ve got fiber, protein, healthy fats, complex carbs, and phytonutrients all working together to nourish your body.

Recipe: Red Sweet Potato Curry with Rice

Serves 4

Ingredients

  • 2 tsp. coconut oil

  • 1 white onion, diced

  • 2 cloves garlic, minced

  • 4 tbsp. Thai red curry paste

  • 2 sweet potatoes, peeled and diced

  • 1 (14oz/400g) can chopped tomatoes

  • 1 cup (240ml) vegetable stock

  • ¼ cup (65g) smooth natural peanut butter

  • ½ cup (120ml) canned light coconut milk

  • Juice of 1 lime

  • 3 cups (480g) cooked white rice

  • ¼ cup (30g) peanuts, chopped

  • Handful coriander, chopped

  • Salt & pepper to taste

Instructions

  1. Heat coconut oil over medium heat in a large pan. Add the onion and cook for around 5 minutes until soft.

  2. Add the garlic and red curry paste, stirring until fragrant.

  3. Add sweet potatoes, chopped tomatoes, vegetable stock, and season lightly. Bring to a boil, then reduce heat and simmer for 30–35 minutes, until sweet potatoes are tender.

  4. In a small bowl, whisk together peanut butter and coconut milk. Add to the pan, stirring until creamy and combined.

  5. Remove from heat, stir in lime juice, and adjust seasoning.

  6. Serve over rice and garnish with peanuts and coriander.

How to Make It Work for You

  • Meal prep friendly: This curry keeps beautifully in the fridge for 3–4 days and tastes even better the next day as the flavors deepen.

  • Freezer option: Skip the rice and freeze just the curry portion in single servings for easy weeknight dinners.

  • Customizable: Add chickpeas for more protein, swap rice for quinoa, or throw in extra veggies like spinach or bell peppers.

  • Omnivore option: Stir in cooked chopped chicken breast (or shrimp) toward the end of cooking for an easy protein boost.
